I carry with me a small amount of non-perishable food (dried rice and soybeans) in an air-tight container. Would clinics generally hold it for me during the study or do I just have to trash it?

Spaulding has lockers to hold 'contraband.'

I think most clinics hold unallowed items while you're inhouse.

What about, say, a bottle of multivitamins?
Or would I risk them going through my stored stuff and throwing me out of the study?

They'll hold any 'contraband' that you declare or that they find during their search during check in. You won't get kicked out of a study for doing this. Generally, the only reason they'd search your stuff during the study is if someone saw you doing soing fishy. They'll also search your stuff during check out, but in my experience, that's a much less thorough search.
If you don't need whatever during the study, I'd just put all the 'contraband' in one container and declare it up front during the initial search.

I saw a guy get kicked out of a check-in after he brought in (and handed over) a bottle of over-the-counter medicated lotion. He raised a fuss about it, but the nurses and doctor all said that they had no way of knowing that he wasn't using the stuff. He claimed that he wasn't using it, only that he had forgotten that it was in his bag.
Be careful to search your own bags before you check into a study.
